How
to make satay
Satay
is a simple and succulent dish consisting of marinated meat
(often chicken) grilled on skewers and served with a spicy
peanut sauce for dipping. It makes a wonderful appetizer,
or can be served with rice and a salad as a main meal.

Soak
skewers and make the marinade
|
|
|
|
Soak
6 bamboo skewers in water for at least 1 hour (this prevents
the skewers burning during cooking). Mix together 2 tablespoons
of soy sauce, 1 tablespoon of lemon juice, 1 teaspoon
of sesame oil, 1 teaspoon of ground turmeric, 1 teaspoon
of ground coriander and 2 teaspoons of brown sugar in
a small bowl. |

Marinate
the chicken and prepare peanut sauce
|

Cut
13 oz (400g) of skinless chicken breasts lengthwise
into 6 even-size strips. Place the chicken strips in
a shallow dish and pour over the marinade. Refrigerate
for at least 1 hour, turning halfway through to ensure
the chicken strips are evenly coated with the marinade.
While the chicken marinates, prepare half the quantity
of the Peanut Sauce recipe.

Preheat
an indoor or outdoor grill. Thread the chicken strips
onto the skewers in a zig-zag fashion (don't bunch the
chicken strips too tightly or they won't cook evenly).

Grill
the skewers over a high heat for around 4 minutes on
each side, brushing lightly with the marinade, until
cooked.

Serve
with peanut sauce and lemon wedges

Serve
the chicken skewers with the cold peanut sauce for dipping
and lemon or lime wedges for drizzling.
