The
vibrant green color and scrumptious flavor of the fava bean puree is a
perfect combination with crisp baked pita wedges.

cups fava (broad) beans (fresh or frozen)cooked, cooled and
shells removed |
| 3
tablespoons extra virgin olive oil |
| 1
tablespoon lemon juice |
| 1
clove garlicminced (crushed) |
| ½
teaspoon sea salt |
| ¼
teaspoon freshly ground black pepper |
| 2
medium-size whole grain pita breads |
Fava
bean puree:
PLACE all ingredients except the pita breads in a food processor or blender
and process until smooth, scraping the sides occasionally. SPOON into a
small bowl to serve.
Pita
wedges:
PREHEAT oven to 230C/450F. CUT each pita bread into 8 wedges. PLACE on
a baking tray and bake for 5 minutes.
