The vibrant green color and scrumptious flavor of the fava bean puree is a perfect combination with crisp baked pita wedges.

2 cups fava (broad) beans (fresh or frozen)—cooked, cooled and shells removed
3 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1 clove garlic—minced (crushed)
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
2 medium-size whole grain pita breads


Fava bean puree:
PLACE all ingredients except the pita breads in a food processor or blender and process until smooth, scraping the sides occasionally. SPOON into a small bowl to serve.

Pita wedges:
PREHEAT oven to 230C/450F. CUT each pita bread into 8 wedges. PLACE on a baking tray and bake for 5 minutes.
