A sizzling dish of shrimp flavored with fresh garlic, sea salt, parsley and served with lemon wedges. Perfect as an appetizer on its own, or served as part of a selection of tapas.

12 large uncooked shrimp (prawns)—peeled and deveined with bottom of tail left intact
2 tablespoons extra virgin olive oil
2 cloves garlic—finely chopped
½ teaspoon sea salt
1 teaspoon finely chopped fresh parsley and lemon wedges


HEAT the oil in a frying pan over a medium heat and add the shrimp, garlic and salt. COOK for 3 minutes, tossing regularly. SPRINKLE with parsley and serve with lemon wedges for squeezing.

Variation: To make chili-garlic shrimp, add 1 small fresh red chili—deseeded and finely chopped.
