A
refreshing fruit salad made with two types of melon and drizzled
with a sweet and tangy ginger syrup. The
fresh ginger-infused syrup in this melon salad can be made
in advance and tossed with the fruit just before serving.

cup water |
| 1-inch
knob of fresh gingerpeeled and crushed with the
side of a large knife blade, keeping it in one piece |
| 2
tablespoons superfine (caster) sugar |
| ½
honeydew melon |
| ¼
small watermelon |
PLACE
the water, ginger and sugar in a small saucepan and bring
to the boil. BOIL for 10 minutes, uncovered, until the liquid
has reduced by about half and turns syrupy. REMOVE the ginger
and let the syrup cool before use. REMOVE the seeds from the
melons and scoop out the flesh with a melon-baller. MIX together
the melon balls with the ginger syrup in a bowl.
