Split English muffins make a great crust for "mini" pizzas.
These yummy pizzas taste especially good with a crisp salad on the side.

clove garlicminced (crushed) |

tablespoons chopped canned tomatoes |

tablespoon tomato paste |
| ½
teaspoon sea salt |
| ¼
teaspoon freshly ground black pepper |

teaspoon extra virgin olive oil |

English muffins (regular or whole grain)split in half |
| 2
ham sliceschopped into small pieces |
| 1/3
red pepper (capsicum)diced |
| 1/3
green pepperdiced |
| 8
pitted black olivesthinly sliced |
| 2½
oz (75g) mozzarella cheesecut into small cubes |
PREHEAT the oven to
230°C/450°F. MIX together the garlic, tomatoes, tomato paste,
olive oil, salt and pepper. SPREAD a thin layer evenly over each muffin
half. ARRANGE the ham, peppers and olives evenly over each muffin half.
PLACE the cubed cheese evenly on top. PLACE the pizzas on a baking tray
and bake for 10 minutes.
