Raita
The combination of cucumber and yogurt makes a traditional cooling accompaniment to serve with spicy Indian dishes.

1 cup plain thick yogurt (Greek-style yogurt is best)
½ cup finely chopped cucumber—peeled and deseeded
½ clove garlic—minced (crushed)
2 teaspoons lemon juice
½ teaspoon salt


MIX together all ingredients in a small bowl until well combined.



  South Indian Shrimp Curry. Tender shrimp gently poached in an a flavorsome gravy infused with an aromatic blend of spices, fresh cilantro and lemon juice served over Basmati rice.


  Lentil, Pea & Potato Curry. Lentils, peas and bite-size cubes of potato in a richly-spiced tomato and coconut milk gravy. Served with basmati rice.


  Dhal with Carrot & Cauliflower. A traditional Indian dhal (lentil curry) with carrots and cauliflower, served on a bed of basmati rice.
