Turkish
pide bread is a type of flat bread similar to Italian focaccia.
Here, it's filled with smoked salmon slices, creamy avocado,
crispy vegetables and a tangy dressing.

handful roughly torn romaine (cos) lettuce |

avocadopeeled and thinly sliced |

Turkish pide bread (or use focaccia bread as a substitute) |
| 3½
oz (100g) sliced smoked salmon |
| 6
thin slices of red onion |

MIX
together the lemon juice, olive oil, garlic, salt and pepper
in a small bowl. ARRANGE the lettuce, tomato and avocado over
the base of the Turkish bread. TOP with the smoked salmon and
red onion and drizzle with the dressing. SANDWICH together with
the Turkish bread top and cut in halves or quarters to serve.
Tip:
This recipe tastes best if the pide bread is warmed in the
oven for a couple of minutes before constructing the sandwich.
