Cut the whole cabbage or lettuce in half

Place the cabbage/lettuce on a chopping board and with a large sharp knife cut in half through the root.


Cut into quarters

Place each cabbage/lettuce half cut-side down and slice in half through the root.


Shred each quarter

Finely slice each cabbage/lettuce quarter so that thin strands fall away. You'll find that most meals won't require a whole cabbage or lettuce, so store the unused quarters in the vegetable compartment of your fridge.
