While
holding the body of the shrimp, squeeze and pull the
head off.

Remove
the shell and legs
|
|
|
Peel
the shrimp shell and legs from the body.

|
Remove
the end of the tail (optional)
|
|
|
 |
If
you're removing the end of the tail (it's often left
on for presentation purposes) hold the body and squeeze
off.

Score
the back of the shrimp
|
|
|
With
a sharp knife, score down the back of the shrimp.
|
|
 |
|
|
Remove
the digestive tract
|
|
|
 |
Remove
the thin, dark digestive tract with the tip of the knife.
|
|
|
